Cupid’s Cheesball

Cheeseballs are wonderful appetizers, a great finger food to take to a party, or a fun treat to enjoy at home.  This sweet, pretty-in-pink version is just the thing for Valentine’s Day!

The ingredients: cream cheese, butter, vanilla, powdered sugar, brown sugar, food coloring, chocolate chips, sprinkles, and chopped pecans (optional).

Beat together the cream cheese, butter, and vanilla.  Any recipe that starts out with those three ingredients has to be good.  And bad….for my waistline.

Add a few drops of food coloring and mix until the cream cheese and butter mixture is a light pink.

Once you get your desired color mix in the sugar and stir in the chocolate chips.  Cover the bowl with saran wrap and refrigerate for 2 hours.

Lay out a piece of saran wrap on the counter and spoon the mixture into the middle.  Form into a ball and place back in the fridge for another hour.

Just before serving remove the saran wrap and roll the ball in sprinkles or chopped pecans.   Or just sprinkle them on top if you are worried about messing up the shape of hte ball.

This sweet treat is delicious with graham crackers, vanilla wafers, pretzels, or fruit.  I didn’t think of this until after but it would also be really cute to form the cheeseball into a heart shape.  Next time!
