Gobble Me Up!

I have a treat for you!  And something to top it with.  Isn’t that great how life works out?  First you need to start off with the treat.  I made some delicious cookies, known around our house as Butter Bombs.  I’m sure you can tell from the name, these are super healthy cookies.  (sarcasm button on.)  This is a recipe out of a family cook book, and it is a favorite around our house.  It is a variation on a chocolate chip cookie and they don’t last long around here!

Mix it up:

  • 1/2 cup + 3 tablespoons butter
  • 1 egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. water
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 2/3 cup flour
  • 1/2 cup oats
  • 8 oz. semi-sweet chocolate chips
  • Chopped pecans (optional.)  Although I don’t know who would want to ruin a perfectly good cookie with nuts, blech.

Preheat oven to 375.  Cream butter, egg, vanilla, water, sugars, salt, and baking soda.  Mix until light and fluffy.  Add flour one cup at a time, stirring until just mixed.  Add oats and chocolate chips.  This time we also added some butterscotch chips, a personal favorite of mine.

 Drop by spoonful onto an ungreased baking sheet and bake for 8-10 minutes.

 Do not over bake!  The cookies will look a little underdone when you take them out of the oven but they will set up and be perfect.  Slightly crispy on the outside, soft on the inside.  Remove from the cookie sheet and cool.  Or just eat right away.

 Yum…just dig right in to that warm, gooey deliciousness.

 If you can bring yourself to give some away (maybe you should just make a double batch) then top them off with some fun treat bag toppers, perfect for Thanksgiving.

    OMG! Thank you! Thank you! Thank you! I just finished making these cookies and they were delicious, but salty, I think maybe because of the amount of baking soda in them. Next time, I think i’ll halve the amount required. I halved the sugar because I don’t like my cookies too sweet. Besides this, I also doubled the vanilla to give it an extra kick and only used butterscotch chips. The end result: about half the cookies are already gone and they’ve only been out of the oven for 20 minutes!!!

    Mentioned you on my blog because this is my new favorite chocolate chip cookie recipe! I tried using almond extract along with the vanilla and I LOVED the results! These cook up nice and fluffy, perfect! Great recipe!
